Puff Pastry filled with Loquat and Raspberry Jam is a delicious pastry, easy to make. There is mainly three steps and the result is excellent . In most of the countries is possible to buy the puff pastry previous made. You will find it in supermarkets in general.

Preparation of Puff Pastry filled with Loquat and Raspberry Jam

To make the jams, place all the ingredients in a pan, for each jam separately. Don’t forget to peel the Loquats and remove the pits first.
Allow the fruits to cook with the water at a medium/high temperature until it’s thicker. Then remove the spices from the Loquat jam and blend each one, individually, with the help of an immersion blender and leaving some chunks. After that, let them cool down completely before placing them in the puff pastry.

For the puff pastry, stretch it until it’s 1cm thin, and then cut into small, even squares. We shaped the puff pastry into a pinwheel for the raspberry jam, and into a diamond for the loquat jam. For the pinwheel shape, make four equal cuts at each corner of one square. Each cut should reach toward the center of the square but not cut all the way through. Place a tablespoon of the raspberry jam in the middle, and then, grab one half of each corner and pull it toward the center of the square, where the jam is placed.

To make the diamond shape, gently fold a square in half diagonally. Make two diagonal cuts along the outside edge of the triangle, leaving about 1mm of pastry on the top. Then, unfold the dough, take the outer “frame” edge and fold it over until it meets the cut you just made. Repeat on the other side to form a diamond shape. Add your filling to the center.

Place the pastries in a tray, covered with parchment paper, and sprinkle some sugar on the puff pastry and bake at 200ºC (392ºF) for about 20mins, until the pastry starts to flake and get golden brown.

After they cool down sprinkle them with some icing sugar and they are ready to serve.

500g of Raspberries
