Octopus Salad is delicious, fresh and perfect recipe for a special group of friends or family. To make this Portuguese traditional salad follow the next steps:
First, cook frozen octopus in pressure cooker with 1 tbsp water and unpeeled onion for 20 minutes ( from the time is reaches pressure) or in a pot over low heat until tender.
After the previous step, drain and cut octopus in 1-inch pieces, then transfer to serving bowl.
Now, add minced onion and parsley. Then stir in Portuguese olive oil (and you have a lot of excellent brands) and vinegar and lastly season with salt and pepper according your taste. Octopus Salad should be served cold before one soup, almost like an appetizer.
